The Chef
Lefteris Lazarou is one of the most famous and respected chefs in Greece. Being a lover of time-honored local cuisine all along, he is an expert in adapting traditional flavors to suit different tastes. He adores fish and seafood and manages to integrate them into high-end gastronomy dishes. With Lazarou in charge of the menu, Varoulko Santorini serves palatable mixes of pure ingredients and special techniques to the diners.
The Menu
Starting with the lunch - pool bar menu, one can select from a variety of starters, including the traditional taramosalata (cured fish roe spread) and a twisted Santorini’s fava. The main dish section consists of mouth-watering plates starring meat or fish. Tuna paillarde with red sauerkraut and sesame oil is one of the most popular. Finally, you can order a fruit salad or the all-time favorite baklava for dessert.
For dinner, you’re offered three tasting menu options. These are full-course menus, and the price is charged per person (135 - 178 euros), depending on the menu you choose - “Aegean”, “Coral',' or 'Lava”. All options include a chef’s welcome dish, a sorbet, and a dessert. The main signature dishes of the chef are the squid with pesto Genovese (included in the Coral menu) and the crayfish tartare with yuzu and ginger (included in the Lava menu).
Last but not least, à la carte dessert options vary since the ingredients and dishes are subject to change depending on the season.
Hours of operation are 12 pm to 6 pm for lunch and 7 pm to 11 pm for dinner.

Some of the best food i have ever had, the service was very fast and the waiters/waitresses were nice.
