The main element is, of course, the sun, which is evident in the name of the restaurant (sol is the Spanish word for sun). The materials and techniques used in the culinary process are also common in Mexico and Crete.
Another detail that sets the restaurant apart, is the usage of the Barbacoa Oven, an authentic technique used in the traditional cuisine of Mexico.
The meat is then wrapped in banana leaves or agave leaves, giving it a very distinctive taste!

The materials they use are locally grown in the fields of Crete, without any additives, and the menu changes according to their seasonality and availability!
